Another superb Champagne from Bruno Paillard, Assemblage 2009 is produced with equal proportions of Chardonnay and Pinot Noir. Just 20% was barrel fermented, so the wood influence is minimal in this delicate wine. We’ve heard it goes very well with lobster, so try that out if you’re feeling extra fancy!
